Well, it's been a month since I started this, even though I thought it was longer. And that's not in the sense of "this is killing me", but just that I lose track of time these days.
The diet is going well. The food I'm eating was getting a little boring, so I've started to mix it up a bit to make some flavor and text adjustments. So far, I've moved from near boredom to feeling like I'm on a food adventurer! There are constraints to my food preparation, but it's fun / challenging to look for ways to enhance the texture or taste and stay within the rules I'm given.
Best of all, IT'S WORKING. I've lost close to 19 pounds in the first month!
Today for lunch, I had a salad with tomatoes, a hard boiled egg and some chicken. I made a salad dressing that had sour cream, brown mustard, rice wine vinegar, smoked paprika and "dipping spices". I could've left off the dipping spices and mustard, I think. I really only tasted the vinegar and paprika. The sour cream cut the acidity of the vinegar a bit. I also brought some fish, but I'm going to save that for when the hungry hits again this afternoon. I'm going to wish I had made more of that salad dressing!
